Add the Biscoff cookie butter, brown sugar, and water to a pot.
Bring to a light boil then simmer for 10 minutes
After 10 minutes, turn off heat and let cool
Strain into an airtight container and keep in the fridge for 2 weeks
For the Cocktail:
Take your martini or coupe glass and rim the edge with Biscoff cookie butter. Crush up a couple of Biscoff cookies and coat the rim.
Add the vanilla vodka, coffee liqueur, liquor 43, Bailey’s, Biscoff simple syrup, and your egg white or aquafaba. Do a dry shake (shake all of the ingredients in the shaker without ice). Then add ice and shake all the ingredients again.
Double strain into your martini glass and serve immediately. Top with a biscoff cookie laying on the rim. Enjoy your Biscoff Martini!
