For the Spiced Honey Syrup:
Add honey and water to a small saucepan over medium heat.
Stir until the honey fully dissolves
Add cinnamon sticks, cloves, ginger, and orange peel and bring to a light boil
Reduce heat to low and gently simmer for 10–15 minutes.
Remove from heat and let steep another 10 minutes for more flavor.
Strain out the spices and let cool.
Store in an airtight container in the fridge for up to 2 weeks.
For the Cocktail:
Rim your glass with lime juice and tajin
Add ice to the glass. Add LALO tequila, spiced honey syrup, and lime juice. Stir altogether until the honey syrup is dissolved.
Top with Topo Chico (about 3-4 oz depending on your glass size)
Stir and garnish with a lime wheel and a piece of honeycomb on a cocktail pick
