Add 1/3 cup of red jellybeans to 2 cups of vodka in a sealed jar. Let it sit in a cool, dark place for 24–48 hours, shaking occasionally, until the vodka is fruity and lightly colored.
Strain out the jellybeans and keep in a sealed jar.
Cocktail:
Add the Starburst jellybean–infused vodka, watermelon schnapps, vanilla simple syrup, and lemon juice to a shaker tin. Add ice and shake well.
Rim your glass with lemon juice or simple syrup, then coat the rim in pink sanding sugar.
Strain the cocktail into the prepared glass.
Garnish with a lemon wheel and a cocktail pick with Starburst jellybeans.
