Option 2: Blender (Large Batch)
Add several cups of watermelon chunks to a blender and blend until smooth and mostly liquid. Strain through a fine-mesh strainer or cheesecloth to remove the pulp. Transfer the juice to an airtight container and refrigerate until ready to use. Pro Tip: Use fresh watermelon juice within 2–3 days for the brightest flavor and color.
For the cocktail:
Place a martini or coupe glass in the freezer to chill it.
Add the watermelon juice, lime juice, vodka (or gin), agave, and 1–2 bar spoons of feta brine to a cocktail shaker.
