Add blackberries, water, and sugar to a saucepan over medium heat. Lightly mash the blackberries as they warm to help release their juice.
Bring the mixture to a gentle simmer, then reduce the heat to low. Let it simmer for about 10 minutes, stirring occasionally.
Remove from heat and let it cool for 20 minutes.
Strain through a fine mesh sieve into a clean container, pressing gently on the solids to extract the liquid.
Store in the fridge for up to 2 weeks.
April Shower's Spritz Instructions:
Add vodka, lemon juice, elderflower liqueur, and simple syrup to a shaker with ice. Shake lightly until chilled.
Strain into a stemmed wine glass over fresh ice.
Top with Prosecco and stir together.
Add a lemon wheel to the rim, and place a few blackberries on a cocktail pick into the drink.
Slowly pour the blackberry syrup over the back of a spoon so it sinks and drips downward through the drink. This creates a "rainy" visual as the syrup sinks down.
