Add the honey and warm water to a bowl or jar. Stir (or shake) until fully combined and smooth. Let cool, then store in the fridge for up to 2 weeks.
Instructions
Wash your carrot bunch, including the tops. Cut off the leafy green tops and set them aside for garnish.
Using a vegetable peeler, shave the carrots into long, thin ribbons. Gently thread each ribbon onto a cocktail pick in a back-and-forth motion, creating loose folds. Continue until the pick is filled and the carrots form a ruffled effect. Set aside for garnish.
Cut your lemon in half, reserving one half for juice. Slice the other half into thin lemon wheels and set aside for garnish.
Add gin, carrot juice, lemon juice, and honey syrup to a shaker. Add ice and shake until well chilled (10–12 seconds).
Fill your glass of choice (we used a wine glass) with fresh ice. Strain the cocktail over the ice.
Top with Prosecco and gently stir to combine.
Garnish with a lemon wheel, the reserved carrot ribbon pick, and the carrot tops. Serve immediately and enjoy your Carrot Garden Spritz!
