Instructions
Prepare the Lavender Simple Syrup:
If you don’t have lavender simple syrup, it’s easy to make. Just combine 1 cup water, 1 cup sugar, and 2 tbsp dried lavender in a saucepan.
Bring to a boil, then simmer until the sugar dissolves.
Let it cool, then strain out the lavender.
Store in a clean bottle in the refrigerator.
Mix the Cocktail:
In a shaker filled with ice, combine the lemon juice, gin, grapefruit juice, and lavender simple syrup.
Shake well until the mixture is well chilled, about 15 seconds.
Prepare Your Glass: Fill a champagne flute or a tall glass with ice (optional, for a colder drink).
Combine:
Strain the mixture from the shaker into your prepared glass.
Top off with champagne, gently pouring it to fill the glass. The champagne will mix with the other ingredients as you pour, creating a beautiful layering effect.
Garnish and Serve:
Garnish with a lemon wheel on the rim of the glass or float it on top.
Serve immediately and enjoy the harmonious blend of flavors.
