In a cocktail shaker, muddle the cucumber pieces with the hibiscus syrup and simple syrup.
Add lime juice and a handful of ice. Shake until the mixture is well chilled.
Double strain into a highball glass filled with fresh ice.
Pour in the sparkling water.
Slowly add the Empress gin by pouring it over the back of a spoon so it floats and creates a layered effect.
Garnish with a cucumber slice and a blackberry.
