Add frozen peaches, peach nectar, 4 oz prosecco, peach schnapps, vodka, and lemon juice to a blender.
Blend until completely smooth and creamy. For best consistency, place in the fridge for 1–3 hours to allow the mixture to thicken.
If hosting or doubling the recipe, refrigerate overnight. The mixture will firm up and can be scooped into glasses using an ice cream scoop right before serving.
Divide the cocktail evenly between 4 champagne flutes or coupe glasses (about 8 oz each).
Top each glass with 1 oz prosecco.
Gently float ¼ oz Aperol on top of each drink.
Garnish with a fresh or frozen peach slice and a mint sprig.
Serve immediately and enjoy!
