1.5 oz white rum 0.75 oz ginger simple syrup 0.75 oz fresh lime juice 2 oz honeydew purée 3 oz soda water to top 6 fresh mint leaves Garnish: mint sprig
Gently muddle mint leaves in the bottom of a shaker to release their aroma.
Add white rum, ginger syrup, lime juice, and honeydew purée to the shaker.
Fill with ice and shake thoroughly until chilled.
Strain into a tall glass filled with fresh ice.
Top with soda water and stir lightly to combine.
Garnish with a sprig of mint.
Pro Tips
Use ripe honeydew for the best flavor. A blender and fine mesh strainer can help create a smooth purée.
Don’t over-muddle the mint just a gentle press is enough to bring out the oils without bitterness.
For added chill, freeze honeydew cubes and blend them for an icy variation.
