Take a martini glass and coat the rim with the vanilla frosting using a butterknife. Place the cinnamon sugar on a plate and spread it out. Dip the rim of the martini glass in the cinnamon sugar and set it aside.
Add the coconut vodka, RumChata, Amaretto, cinnamon simple syrup, and 1 oz cream of coconut to a shaker tin. Add ice and shake.
Strain the cocktail into the martini glass.
Take your shamrock cocktail pick, place an Irish Potato Candy on the pick and lay it along the rim of the martini glass.
Serve immediately and enjoy your Irish Potato Martini!
