  • Place the mint leaves in a cocktail shaker and press gently with a muddler to release their aroma avoid tearing them.
  • Add the rum, lime juice, simple syrup, and a handful of ice.
  • Shake briefly to chill and combine.
  • Strain into a highball glass filled with fresh ice.
  • Top with club soda.
  • Garnish with a lime wheel and a sprig of mint.

  • Use fresh lime juice and real mint for the brightest flavor.
  • Don’t over-muddle the mint it should be bruised, not shredded.
  • For a lighter version, reduce the rum to 1.5 oz and add more club soda.
