Ingredients

  • 1 oz plum-infused gin
  • 1 oz Campari
  • 1 oz sweet vermouth
  • 0.5 oz plum syrup
  • 0.75 oz lemon juice
  • 1 egg white
  • Sage leaf for garnish

Instructions

  • Add the plum-infused gin, Campari, sweet vermouth, plum syrup, lemon juice, and egg white to a cocktail shaker.
  • Dry shake (without ice) vigorously to emulsify the egg white.
  • Add a couple of ice cubes to the shaker and shake again until well-chilled.
  • Double strain the mixture into a glass.
  • Garnish with a sage leaf and serve immediately.

  • To create a richer foam, shake the mixture for at least 20 seconds before adding ice.
