Ingredients

  • 2 oz white rum
  • 1.5 oz rhubarb mint simple syrup
  • 1 oz lime juice
  • Few sprigs fresh mint
  • Splash of soda water
  • Lime wedge and mint sprig for garnish

Instructions

  • Muddle: Place fresh mint in the bottom of a rocks glass and gently muddle to release the oils.
  • Build: Fill the glass with crushed ice. Add rhubarb mint syrup, lime juice, and white rum.
  • Top: Add a splash of soda water.
  • Stir: Use a bar spoon to stir gently, mixing the flavors and chilling the drink evenly.
  • Garnish: Top with more mint or a lime wedge for a visual and aromatic finish.
