- 4 strawberries halved
- ½ fennel bulb diced into ½-inch cubes
- 1 stalk rhubarb diced into ½-inch cubes
- 1.5 oz blanco tequila
- 0.5 oz Aperol
- 2 oz club soda to top

Add the halved strawberries, diced fennel, and rhubarb to a cocktail shaker.
Muddle well until the fruits and vegetables begin to break down and release their juices.
Pour in the blanco tequila and Aperol.
Add ice to the shaker and shake until chilled.
Strain into a rocks glass filled with ice.
Top with a splash of club soda and stir gently.
Garnish with a cilantro sprig, sliced strawberry, and rhubarb.
