Ingredients

  • 4 strawberries halved
  • ½ fennel bulb diced into ½-inch cubes
  • 1 stalk rhubarb diced into ½-inch cubes
  • 1.5 oz blanco tequila
  • 0.5 oz Aperol
  • 2 oz club soda to top
  • Garnish: cilantro sprig, strawberry slices, and rhubarb

Instructions

  • Add the halved strawberries, diced fennel, and rhubarb to a cocktail shaker.
  • Muddle well until the fruits and vegetables begin to break down and release their juices.
  • Pour in the blanco tequila and Aperol.
  • Add ice to the shaker and shake until chilled.
  • Strain into a rocks glass filled with ice.
  • Top with a splash of club soda and stir gently.
  • Garnish with a cilantro sprig, sliced strawberry, and rhubarb.
