To Make the Chai Simple Syrup:
Bring 1 cup of water to a boil in a small pot.
Remove from heat, add chai tea bags, cover, and steep for 10–15 minutes.
Discard the tea bags, then stir in the sugar while the tea is still warm.
Bring the mixture back to a gentle simmer for about 3 minutes, then remove from heat.
Stir in vanilla extract and let it cool completely. Store in the refrigerator for up to 2 weeks.
To Make the Old Fashioned:
In a mixing glass, add bourbon, lemon juice, bitters, and chai syrup.
Fill with ice and stir until well chilled.
Strain into a rocks glass with a large ice cube.
Garnish with a cinnamon stick, star anise and orange slice.
