Ingredients

  • 2 ounces coconut milk
  • 1 ounce coconut rum
  • 1 ounce white rum
  • 1 ounce lime juice
  • 1 tablespoon sugar
  • Sparkling water to top
  • 4 mint leaves plus more for garnish
  • Pomegranate arils for garnish

Instructions

  • In a shaker or mixing glass, muddle the mint leaves with the sugar and lime juice until the sugar dissolves and the mint is aromatic.
  • If you prefer a smoother cocktail, strain out the muddled mint leaves before proceeding.
  • Add the white rum, coconut rum, and coconut milk to the shaker, stirring or shaking gently to combine.
  • Fill a glass halfway with ice, then pour in the coconut rum mixture until the glass is about three-quarters full.
  • Top with sparkling water for a light, bubbly finish.
  • Garnish with extra mint leaves and a sprinkle of pomegranate arils for a festive look.

Notes

Pro Tips

  • For added flavor, muddle a few pomegranate arils along with the mint and sugar.
  • Adjust the sweetness to your liking by adding more or less sugar.
  • For an extra cold drink, chill the coconut milk in the refrigerator before use.
