Shake absinthe, simple syrup, and ice; strain into glass, top with water.

  • Prepare the Glass:
  • Fill a cocktail shaker with ice.
  • Mix the Drink:
  • Add absinthe, simple syrup, and 2 dashes of anisette or Pernod to the shaker.
  • Shake the ingredients until they are well-chilled.
  • Serve:
  • Strain the mixture into a large snifter or highball glass filled with crushed or pebble ice.
  • Top the glass with soda water, about 2 ounces, and stir gently.
  • Garnish with a mint sprig.
