Instructions
In a medium pot, bring 4 ounces of water, honey, cranberries, thyme, and sliced ginger to a boil over high heat. Let boil for about 5 minutes, or until the cranberries start to burst.
Remove the pot from the heat and allow the mixture to cool. Remove the thyme and ginger slices. For a smoother syrup, strain out the cranberries if desired.
In a large pitcher, combine the cranberry syrup mixture with the vodka, elderflower liqueur, grapefruit juice, and lime juice. Chill until ready to serve.
Just before serving, add the ginger beer to the pitcher, stirring gently.
Garnish each glass with a slice of grapefruit and a star anise for an aromatic, festive touch.
