Instructions
Prepare the Cocktail Shaker:
Add the tequila, lime juice, passion fruit puree, simple syrup, orange liqueur, and egg white into a cocktail shaker. If you prefer to avoid using egg white, you can substitute it with aquafaba for a similar texture.
Dry Shake:
Shake the mixture vigorously without ice first (dry shake), for about 15 seconds. This helps to emulsify the egg white and develop a nice froth.
Add Ice and Shake Again:
Fill the shaker with ice and shake again vigorously for another 10-15 seconds. This second shake chills the mixture and enhances the frothy texture.
Strain and Serve:
Strain the cocktail through a fine mesh strainer into a chilled coupe glass. This step is crucial to ensure a smooth, frothy top without any ice shards or pulp.
Garnish:
Scoop a few fresh passion fruit seeds on top of the froth for an extra burst of flavor and a visually appealing garnish. Add a lime wheel or twist to the rim of the glass for an extra touch of elegance.
