- 1.5 oz gin
- 1 oz passion fruit pulp
- 0.75 oz orange juice
- 0.75 oz Aperol
- 0.5 oz simple syrup
- 1 egg white
- Passion fruit for garnish
In a cocktail shaker, combine the gin, passion fruit pulp, orange juice, Aperol, simple syrup and egg white. Dry shake (without ice) vigorously to emulsify the egg white.
Add ice to the shaker and shake again until well-chilled.
Double strain the mixture into a chilled coupe glass.
Garnish with a slice passion fruit pulp and serve immediately.

- To enhance the froth, dry shake the ingredients for at least 20 seconds before adding ice.
