Peach Puree Recipe:

  • Boil a medium pot of water and place three peaches in the boiling water for a couple minutes. Take the peaches out of the water with a slotted spoon or tongs, and place the peaches in an ice bath. Once cooled, peel off the skin. You can also use already peeled frozen peaches that have been thawed (1 lb is about 3 peaches)
  • Cut peeled peaches in half and remove the pits. Place in a blender or food processor and blend until you get a smooth puree. If you would like it sweeter, you can add a little sugar or honey and blend again
  • Keep in the refrigerator for about a week, or freeze in an ice cube tray for longer storage. (Frozen peach puree ice cubes would go great in a glass of bubbly Prosecco)

For the Cocktail:

  • Rim a cocktail glass with sugar. To do this, rub a lemon wedge around the rim of the glass, then dip the rim in sugar.
  • In a cocktail shaker, combine lemon juice, peach vodka, peach puree, grenadine and simple syrup.
  • Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.
  • Strain the mixture into the prepared cocktail glass.
  • Garnish with a lemon wheel.
  • Serve immediately and enjoy your Peach Lemon Drop.
