  • Add the passionfruit nectar, pineapple juice, lemon juice, and simple syrup to a cocktail shaker. Fill it halfway with ice.
  • Cover and shake until well chilled. Strain into a Collins glass filled with fresh crushed ice.
  • Top with about 2 oz of club soda, then gently layer the Empress Gin on top. Garnish with a lemon wedge.
