Strawberry Pineapple Mojito

- 2 oz White Rum
- 1/2 oz Strawberry Simple Syrup
- 1 oz Pineapple Juice
- 1 oz Freshly Squeezed Lime Juice
- 4-5 Mint Leaves
- Prosecco for topping
- 1 Lime Slice for garnish
- 1 Mint Sprig for garnish
Place the mint leaves and strawberry simple syrup in a cocktail shaker.
Muddle the mint leaves to release their oils.
Add the white rum, lime juice, and pineapple juice to the shaker.
Fill the shaker with ice and shake vigorously for 30 seconds.
Fill your cocktail glass with ice and strain the mixture from the shaker into the glass.
Top off the glass with Prosecco.
Garnish with a lime slice and a mint sprig.
