If you prefer a sweeter drink, prepare the simple syrup by dissolving 1 oz of sugar in 1 oz of water over low heat. Stir until the sugar is completely dissolved. Allow it to cool before using.
Prepare the Watermelon Puree:
Cut seedless watermelon into chunks and blend until smooth. Strain the puree to remove any pulp for a smoother texture.
Mix the Bellini:
In a mixing glass, combine 2 oz of watermelon puree and 1/2 oz of lime juice. If desired, add a splash of the prepared simple syrup to taste.
Pour the mixture into a chilled flute or champagne glass.
Add the Prosecco:
Slowly top off with 3 oz of chilled Prosecco. Pour gently to retain the sparkling bubbles.
Garnish and Serve:
Garnish with a small wedge of watermelon or a slice of lime on the rim of the glass.
