Try this easy Watermelon Bellini recipe for a refreshing treat. Perfect for any occasion.

Equipment

Ingredients

  • 2 oz watermelon puree seedless
  • 3 oz Prosecco or any sparkling white wine chilled, as needed
  • 1/2 oz lime juice

Simple Syrup (optional):

Garnish:

  • Small watermelon wedge or a slice of lime

Instructions

Make the Simple Syrup (Optional):

  • If you prefer a sweeter drink, prepare the simple syrup by dissolving 1 oz of sugar in 1 oz of water over low heat. Stir until the sugar is completely dissolved. Allow it to cool before using.

Prepare the Watermelon Puree:

  • Cut seedless watermelon into chunks and blend until smooth. Strain the puree to remove any pulp for a smoother texture.

Mix the Bellini:

  • In a mixing glass, combine 2 oz of watermelon puree and 1/2 oz of lime juice. If desired, add a splash of the prepared simple syrup to taste.
  • Pour the mixture into a chilled flute or champagne glass.

Add the Prosecco:

  • Slowly top off with 3 oz of chilled Prosecco. Pour gently to retain the sparkling bubbles.

Garnish and Serve:

  • Garnish with a small wedge of watermelon or a slice of lime on the rim of the glass.
  • Serve immediately and enjoy your refreshing Watermelon Bellini.
