Ingredients

Blueberry Puree:

  • 1 cup fresh blueberries
  • 1 tablespoon sugar adjust based on sweetness of blueberries
  • 1 tablespoon lemon juice

To Serve:

  • Chilled Prosecco or any sparkling white wine
  • Fresh blueberries for garnish optional
  • Mint leaves for garnish optional

Instructions

  • Make the Blueberry Puree:
  • In a blender, combine the fresh blueberries, sugar, and lemon juice.
  • Blend until smooth. If the puree is too thick, you can strain it through a fine mesh sieve or add a little water to thin it out.
  • Prepare the Cocktails:
  • Spoon about 2 tablespoons of the blueberry puree into each champagne flute.
  • Slowly pour chilled Prosecco over the puree, allowing it to mix naturally. You can stir gently if needed to blend the flavors.
  • Garnish and Serve:
  • Garnish with a few fresh blueberries and a sprig of mint on top.
