Ingredients

  • 8 oz watermelon cubes
  • 1 oz lime juice
  • 1 tablespoon sugar optional, depending on the sweetness of the watermelon
  • 2 oz white rum or vodka optional
  • Club soda or sparkling water
  • Lime slice and small watermelon wedge for garnish

Instructions

Blend the Watermelon:

  • Place the watermelon cubes in a blender and blend until smooth.
  • Strain the watermelon puree through a fine mesh sieve to remove the pulp, if desired.

Mix the Drink:

  • In a shaker or large glass, combine the strained watermelon juice, lime juice, and sugar (if using). Stir or shake until the sugar is dissolved.
  • Add the rum or vodka, if using, and mix well.

Assemble the Rickey:

  • Fill a glass with ice cubes.
  • Pour the watermelon mixture over the ice.
  • Top with club soda or sparkling water, gently stirring to combine.
