Tasting Notes

The Dark and Stormy brings a bold blend of deep rum and spicy ginger beer with a hint of citrus brightness. The dark rum floats atop the effervescent ginger beer, giving each sip layers of richness, warmth, and spice. Notes of molasses, caramel, and tropical fruit from the rum contrast with the sharp, slightly sweet ginger flavor. A squeeze of lime adds a clean finish that balances the drink’s intensity. Refreshing yet strong, the Dark and Stormy is straightforward and satisfying, with a flavor profile that keeps things interesting without being overly complex.

Equipment and Glassware

The Dark and Stormy keeps it minimal, requiring only basic bar tools. A jigger ensures accurate pours, and a bar spoon can help float the rum if you want that signature layered look. You’ll need a rocks glass or old-fashioned glass something sturdy and wide enough to hold ice and leave room for the drink to breathe. Ice cubes (not crushed) are best to keep dilution steady without overwatering. This cocktail’s simplicity is part of its appeal, making it an easy choice even for casual home bartenders with limited gear.

Ingredients

  • 2 oz dark rum
  • 5 oz ginger beer
  • Garnish: Lime wedge

Instructions

  • Fill a rocks glass with ice.
  • Pour ginger beer over the ice, leaving room for the rum.
  • Slowly pour the rum on top to create a layered effect.
  • Add a lime wedge to the rim of the glass.

Pro Tips

  • Use high-quality ginger beer for bold flavor avoid sugary substitutes.
  • Float the rum slowly over a spoon for a layered presentation.
  • Fresh lime juice is optional but adds brightness.
  • Avoid crushed ice, which can dilute the drink too quickly.
  • Choose a dark rum with strong molasses or spice notes for depth.
  • Chill the ginger beer beforehand for maximum refreshment.
  • Stir before sipping if you prefer a more blended flavor experience.

When to Serve

The Dark and Stormy is ideal for casual evenings, backyard gatherings, and cool summer nights. It’s a great match for seafood dinners, grilled dishes, or just a relaxed night with friends. Its bold, spicy character also fits cooler weather, making it versatile across seasons. Serve it when you want a cocktail that’s flavorful without being overly sweet or complicated. It works equally well as a late-afternoon refresher or a simple nightcap. Quick to prepare and easy to sip, this drink fits a wide range of occasions.

  1. the instructions say use a bar spoon to add the rum. Why is it just poured in??Also, you mention lime juice in your tasting notes but it’s not listed in the ingredients. This seems confusing for 1st time drink makers..
