Ingredients

  • 2 ounces bourbon
  • 1 ounce lemon juice
  • 1 ounce jalapeño simple syrup
  • 1 ripe peach
  • 2 sprigs fresh thyme one stripped of leaves

Instructions

  • In a cocktail shaker, combine the bourbon, lemon juice, and jalapeño simple syrup.
  • Cut the ripe peach in half, remove the pit, and squeeze the peach, smashing it in your hand over the martini shaker to release the juices. Allow any peach pieces that fall into the shaker to remain.
  • Add the leaves from one sprig of fresh thyme into the shaker.
  • Shake the mixture vigorously to ensure all the ingredients are well infused.
  • Fill a lowball glass with fresh ice and strain the bourbon mixture into the glass.
  • Garnish with a sprig of fresh thyme and a peach wedge if desired. Serve immediately and enjoy.
