- 1 tablespoon sugar
- 2 teaspoons filtered water
- 2 teaspoons fresh lemon juice (divided)
- 1 1/2 ounces Rivi Gin Raspberry Honey Flavored Gin
- 1 1/2 tablespoons fig puree (from the figs prepared earlier)
- 1/2 teaspoon honey (or more, to taste)
- 2 ounces ginger ale
Instructions for making the cocktail.
For Fig Puree:
Step 1: Combine figs, sugar, water, and lemon juice in a blender and pulse until smooth.
Step 2: Refrigerate for 2-3 days or use immediately.
For Cocktail:
Step 1: In a cocktail shaker, combine fig puree and honey.
Step 2: Mix with a spoon until well blended.
Step 3: Add ginger ale, gin, lemon juice and ice.
Step 4: Shake well.
Step 5: Strain into a chilled cocktail glass.
Step 6: Garnish with fig quarters on a skewer.
