Ingredients

  • 2 oz Gin
  • 1 oz Pineapple juice fresh if possible
  • 1/2 oz Lemon juice
  • 1/2 oz Simple syrup equal parts sugar and water, heated until sugar dissolves and cooled
  • Club soda to top off
  • Pineapple wedge and mint sprig for garnish

Instructions

Prepare the Simple Syrup:

  • Combine equal parts sugar and water in a saucepan. Heat until the sugar dissolves completely. Let it cool before use.

Mix the Cocktail:

  • In a shaker, combine the gin, pineapple juice, lemon juice, and simple syrup.
  • Fill the shaker with ice, cover, and shake vigorously for about 15 seconds.
