Ingredients

  • 1 small peach cut in half and pit removed
  • 2 sprigs thyme
  • 0.5 ounce honey
  • 1 ounce water
  • 1.5 ounces bourbon
  • 1 ounce simple syrup
  • Club soda for serving
  • Fresh peach slices for garnish
  • Fresh thyme sprigs for garnish

Instructions

  • In a cocktail shaker, add the roasted peaches and the reserved juices. Use a muddler or the back of a wooden spoon to thoroughly muddle the peaches.
  • Add the bourbon, simple syrup, and ice to the shaker. Secure the lid and shake vigorously until the mixture is well chilled.
  • Place two large ice cubes into each of the highball glass
  • Strain the cocktail mixture through a small mesh sieve as you pour it into the highball glass, ensuring a smooth drink.
  • Top off the glass with a splash of club soda for a bit of fizz.
  • Garnish with fresh peach slices and a sprig of thyme. Serve immediately and enjoy!
