- 2 ounces Tequila
- 1/2 ounce Orange Juice
- 1 ounce Lemon Juice
- 1 teaspoon Simple Syrup
- 3 Strawberries to muddle
- Dash of bitters
- 1 Egg White

- Muddle the Strawberries:
- In a shaker, muddle the 3 strawberries thoroughly to release their juice and flavor.
- Mix the Ingredients:
- Add the tequila, orange juice, lemon juice, simple syrup, and a dash of bitters to the shaker with the muddled strawberries.
- Add the egg white last. The egg white is used to create a frothy texture and should be handled with care.
- Dry Shake:
- First, perform a dry shake (shaking without ice) for about 15 seconds. This is important to help the egg white emulsify with the other ingredients and become frothy.
- Add Ice and Shake Again:
- Fill the shaker with ice and shake vigorously for another 15-20 seconds. This second shake with ice chills the mixture and enhances the frothiness of the egg white.
- Strain and Serve:
- Strain the cocktail into a chilled glass. Double straining (through a fine mesh strainer) is recommended to ensure a smooth texture, removing any bits of strawberry or ice.
- Garnish and Enjoy:
- Garnish with a fresh strawberry or a small skewer of strawberries on the rim of the glass.
- Optionally, you can add a small sprig of mint for an extra touch of color and freshness.
