  • Muddle the Strawberries:
  • In a shaker, muddle the 3 strawberries thoroughly to release their juice and flavor.
  • Mix the Ingredients:
  • Add the tequila, orange juice, lemon juice, simple syrup, and a dash of bitters to the shaker with the muddled strawberries.
  • Add the egg white last. The egg white is used to create a frothy texture and should be handled with care.
  • Dry Shake:
  • First, perform a dry shake (shaking without ice) for about 15 seconds. This is important to help the egg white emulsify with the other ingredients and become frothy.
  • Add Ice and Shake Again:
  • Fill the shaker with ice and shake vigorously for another 15-20 seconds. This second shake with ice chills the mixture and enhances the frothiness of the egg white.
  • Strain and Serve:
  • Strain the cocktail into a chilled glass. Double straining (through a fine mesh strainer) is recommended to ensure a smooth texture, removing any bits of strawberry or ice.
  • Garnish and Enjoy:
  • Garnish with a fresh strawberry or a small skewer of strawberries on the rim of the glass.
