Ingredients

  • 1/2 cup fresh blueberries plus extra for garnish
  • 8-10 mint leaves
  • 1 lime cut into wedges
  • 1/2 oz simple syrup adjust based on sweetness preference
  • 2 ounces coconut rum
  • 2 ounces pineapple juice
  • Soda water to top up
  • Pineapple wedge for garnish
  • Extra mint leaves for garnish
  • Extra blueberries for garnish

Instructions

  • In a shaker, gently muddle the blueberries and mint leaves to release their flavors. Be careful not to shred the mint leaves into tiny pieces.
  • Pour the lime juice, simple syrup, coconut rum, and pineapple juice into the shaker.
  • Add a good amount of ice to the shaker. Secure the lid and shake vigorously for about 15 seconds to chill and combine the ingredients thoroughly.
  • Pour the mixture into a glass filled with crushed ice
  • OPTIONAL: Strain the mixture to filter out the muddled blueberries and mint leaves.
  • Gently top up the glass with soda water for a refreshing fizz.
  • Garnish with a skewer of fresh blueberries, a wedge of pineapple, and a sprig of mint. Enjoy your tropical drink.
